Two Delicious (and Healthy!) Valentine’s Day Treats to Make Now

RED VELVET VALENTINE’S DAY ENERGY BARS

Makes: 9 Bars

INGREDIENTS:

1 Cup Oats

1/2 Cup Organic Coconut

1/2 Cup (a little more than one scoop) Chocolate Protein Powder (I used Vega One)

1/2 Cup Favorite Nut Milk (I used Almond)

1/4 Cup Coconut Oil

1/4 Cup Cacao Nibs or Dark Chocolate

5-10 Dates, soaked (I used 8)

3 Tablespoons Beetroot Powder (natural food coloring!)

Splash Vanilla (about 1/2 teaspoon)

Pinch Sea Salt

Step 1

Add oats and coconut to food processor and process into small pieces, until flour-like.

Step 2

Add protein powder, nut milk, coconut oil, dates, beetroot powder, vanilla, and sea salt and process until sticky and crumbly.

Step 3

Transfer mixture to a large bowl and fold in cacao nibs or dark chocolate.

Step 4

Line a 9×9 baking pan with parchment paper and press mixture into pan. 

Step 5

Place in freezer to set for 10+ minutes.

Step 6

Remove from freezer, cut into 9 squares, and enjoy!

PINK OMBRE CHIA PUDDING

Yields: 2 Cups Pudding

*To create that cute strawberry-on-glass look, simply slice a strawberry super thin and stick to the inside of a dry mason jar before carefully adding pudding at an angle.

INGREDIENTS:

1 Can Full-Fat Organic Coconut Milk

1 Banana

4 Tablespoons Chia Seeds

10 Strawberries

Splash Vanilla (about 1/2 teaspoon)

Optional Sweetener: 4 Dates or 1-2 Tablespoons Maple Syrup

Optional Topping: Small handful Cacao Nibs or Dark Chocolate

Step 1

Blend coconut milk, banana, and vanilla in a blender until smooth. If desired, add optional sweetener.

Step 2

Separate pudding into equal parts in four small bowls (about 1/2 cup each):

- For the white layer, leave pudding as-is and add 1 Tablespoon chia seeds, mix, and place in refrigerator to set.

- For the baby pink layer, add pudding and one strawberry to blender and blend. Return to bowl, add 1 Tablespoon chia seeds, mix, and place in refrigerator to set.

- For the light pink layer, add pudding and 2-3 strawberries to blender and blend. Return to bowl, add 1 Tablespoon chia seeds, mix, and place in refrigerator to set.

- For the pink later, add pudding and 4-6 strawberries to blender and blend. Return to bowl, add 1 Tablespoon chia seeds, mix, and place in refrigerator to set.

Step 3

Let pudding set in refrigerator for 1+ hour.

Step 4

Chop remaining strawberries for your garnish and darkest top layer.

Step 5

To assemble, layer each color into mason jar and top with chopped strawberries and optional cacao nibs.
